Texas Tech University’s registered dietitian for Hospitality Services, Mindy Diller, is recommending the Mediterranean plan as a way to get back in shape after the holiday season. The plan focuses on eating more plant-based foods and less animal protein, providing a variety of lean proteins, fruits, vegetables, healthy fats, and fiber. Research suggests that following the Mediterranean diet can reduce weight, depression, heart disease, inflammation, and the incidence of diseases such as Parkinson’s, Alzheimer’s, Type 2 Diabetes, and certain cancers. It may also lessen symptoms of posttraumatic stress disorder (PTSD) and reduce mortality rates.

Diller has worked to make Mediterranean-friendly foods readily available on the Texas Tech campus, providing grab-and-go options with fresh fruit, vegetables, and plant-based proteins at various dining locations. The campus dining establishments offer lean proteins, whole grains, and healthy fats to support the Mediterranean plan. Students, like dietetic intern Megan Matney, appreciate the convenience and variety of these options, which can help support energy, health, and weight management.

To further support healthy eating habits, Diller created a weekly blog, “Eat at Texas Tech”, which provides nutrition tips and resources for Red Raiders and beyond. The blog covers a variety of topics, including the Mediterranean plan, offering cooking tips and recipes to help individuals make smart eating choices.
